Tuna & Edamame Noodle Stir Fry


Stir Fry is one of the easiest things to make for lunch or dinner especially when you’re in a rush. I usually just find whatever veggies I have in the fridge and toss them in a pan with some sort of protein and maybe a wholegrain. In this recipe I have used edamame noodles as my base and chilli tuna as my protein which can also be substituted for salmon or chicken which is also great.



4 packet of edamame noodles ( found at most health food stores, can also substitute for brown rice)

½ broccoli chopped

½ cup chopped eggplant

2 stems of bok choy chopped

½ cup diced mushrooms

1 tbsp freshly chopped ginger

1 tbsp chilli flakes or fresh chilli chopped

¼ cup walnuts

3 tbsp tamari

3 tbsp sesame oil

3 tbsp coconut oil

sunflower seeds to top

  1. Ensure all vegetables are chopped into small pieces
  2. Add all ingredients into a frying pan on low heat and continuously stir adding more liquid if vegetables begin to stick to the pan
  3. Once vegetables have become sautéed and the walnuts are browned remove from heat
  4. Place into a bowl and top with sunflower seeds and enjoy!
