Sweet Potato Chips

Eating healthily should’t have to mean eating boring. Lots of people perceive healthy food as just salads and “healthy tasting” food. Sweet potato chips are a great alternative to regularly deep fried hot chips or regular potatoes which are high in starch and fats. Sweet potato is also a carbohydrate but is a complex carb as opposed to a simple carb. These chips appeal to everyone and are a great dish to have as a snack or a side to lunch or dinner. You can add any flavours or spices you want to make them your own as well!

Recipe

Ingredients:

2 sweet potatoes peeled and chopped into sticks

3 tbsp coconut oil

generous handful of chilli flakes, cayenne pepper, black pepper, salt

( take away the cayenne pepper and replace with paprika for less spice)

Method:

Preheat the oven to 180 degrees celsius

Cut and peel the sweet potato into chips

Lay out into a dish and cover with coconut oil and spices. Use your hands to toss everything together making sure all the potato is covered with the oil

Place in the oven and cook for about 45mins or more depending on your oven.
