Ginger and Vegetable Quinoa Fritters


I came up with this recipe one day after I had a huge craving for corn fritters but had been trying to stay off gluten which is unfortunately found in corn. I decided I might try and make some fritters out of quinoa instead. Quinoa is one of the most nutrient dense grains available, high in protein and has positive effects on metabolic, cardiovascular and gastrointestinal health. These fritters go nicely with some soy or tamari sauce, or try with fresh lemon juice and pesto.



½ cup cooked quinoa

1 tsp fresh chopped chilli

2 eggs

1 stick celery finely sliced

1 grated carrot

1 stick kale finely chopped

pinch of salt and pepper

1 tbsp freshly chopped ginger

handful of sesame seeds

¼ cup coconut flour or almond meal

1 tsp cayenne pepper (optional for spice)

2 tbsp coconut oil to cook

1 small can tuna ( optional for more protein)




  1. Combine all ingredients together until thick
  2. Mould into patties, they may be a bit sticky but this is fine as long as the ingredients are binded together
  3. Grease the frying pan with coconut oil and fry until both sides are browned
  4. Top with tamari, pesto or lemonIMG_0558.JPG
