I made this salad when I felt like a light lunch the other day. It takes literally 5 minutes and you can add any type of protein to it easily if you like or eat it as it is or even as a side dish
- half an avocado
- handful of roasted almonds
- coles stir fry mix ( essentially its just raw shredded carrot, cabbage, kale)
- baby spinach
- lemon, olive oil, salt, pepper, chilli, tahini ( for dressing)
toss all ingredients together and enjoy!
