Anzac Biscuits

Who doesn’t love a yummy Anzac cookie! I made these up on the spot and they were delicious- even my non healthy friends ate them! (shock horror) Full of good fats and  fibres it’s hard to go wrong with these. Super easy too!

Ingredients

  • 1 cup oat flour
  • 1/2 cup chopped almonds
  • 1 cup rolled oats
  • 1 tsp vanilla
  • 1 tbsp cinnamon
  • 1/2 tsp baking powder
  • 1 cup shredded coconut
  • 3/4 cup coconut oil melted
  • 1/4 cup honey
  • 1/4 cup almond meal
  • 3 tbsp almond milk
  • pinch of salt

Method

  1. Set oven to 170 degrees celsius
  2. Blend oat flour, vanilla, cinnamon, baking powder, coconut oil, honey, almond meal, almond milk and salt until blended together and doughy
  3. Add rolled oats, almonds and coconut. Blend on a low speed so that the ingredients still stay chunky and don’t all blend finely
  4. Roll into desired size balls and bake in oven for 10-15 mins
  5. Enjoy!
