Haloumi and Roast Vege Salad

I made this salad after a friend expressed her craving for haloumi and the need for an easy recipe. I made this as a sort of base that can be used as a side salad or a main by adding protein of choice like lentils for you veggos or some chicken/tuna etc !



  • 1 small bag rocket
  • 1/2 small eggplant
  • 1/2 red capsicum
  • 2 tbsp olive oil
  • 1/2 lemon juice ( and zest optional)
  • 1/4 pomegranate seeds
  • 2 -3 tbsp toasted pine nuts
  • feel free to add any other roasted vegetables you may like e.g. brussel sprouts, cauliflower, broccoli, sweet potato


  • preheat the oven to 180 degrees. Chop up the capsicum and eggplant and bake in the oven till golden / softened (around 20 mins)
  • in a pan, lightly fry the haloumi until golden both sides and then add the pine nuts to toast till crunchy and golden
  • on a plate, place the rocket as a base and then toss the veggies, haloumi, nuts and pomegranate seeds on top
  • drizzle lemon juice and olive oil over the salad and great some lemon zest if you like
  • Optional: add a protein of choice!! e.g. lentils, beans, tuna, chicken, salmon etc
