One thing I have been obsessed with making lately when I need a really quick snack or lunch is nori rolls.
They are so easy to make- I often just put a whole bunch of whatever veg and protein I have in the fridge and roll them up with either a soy sauce or tahini dressing.
I have used basic veggies below but other things I love including in them are sautéed kale, edamame noodles and roast veg!
seaweed sheets/ nori sheets
1 carrot sliced
1 cucumber sliced
1 capsicum sliced
1/2 avocado sliced
1/2 cup baby spinach or greens of choice
tamari/soy sauce OR tahini dressing (combine 1 tsp tahini, olive oil and lemon juice)
Lie the seaweed flat and place all ingredients horizontally, roll up and enjoy !
