Veggie Burgers

 

I made these up a few weeks ago when I was short of time for dinner and they turned out SO good I have made them at least once a week since (oops). They are super easy, chuck everything in the blender, fry and you’re done! Pair with any other veg or salad you might like as I have done below with some greens. Enjoy!

Recipe (Serves 1-2 people)

Ingredients

1/2 can lentils

1 tsp chilli flakes

1 tsp turmeric

1 garlic clove

1/4 red onion chopped

1-2 leaves of kale( from the whole stalk)

2 tbsp buckwheat flour

2 tbsp olive oil

2 tbsp sesame seeds

(1 – 2 tbsp coconut oil to fry)

Method

  1. Place the kale and all the spices in the blender and blend until the kale is finely chopped
  2. Add all other ingredients and blend well until all combined
  3. Heat a pan with about 1 tbsp coconut oil and fry for a few mins each side until lightly crispy
  4. Pair with veggies or enjoy alone as a snack!
