Thai San Choy Bow Vegetarian Cups

This quick and easy meal or snack is the perfect go to when you’re feeling lazy or short for time! I made it the other day and it was so good

Ingredients(makes 1)

2 pieces of tofu finely sliced

1/2 carrot finely sliced

1/2 zucchini finely sliced

2 iceberg lettuce cups

1 tbsp fresh ginger

1 tbsp coconut oil

1 tbsp tamari

Toss all ingredients except lettuce in the pan and cook until golden and crispy

 

Throw in 1 tbsp fine chilli and 1 tbsp cashews into the pan and mix together

serve into lettuce cup and enjoy!
