Something a little bit different for brekkie today! I had some leftover quinoa in the fridge and decided to make some bircher which turned out really yummy. It was satiating but not too heavy as sometimes bircher mueslis can be. This one is great as you can add anything you want really ( different seeds, nuts and superfoods)! I have put what I included below but change it up depending on flavours! You could add lemon zest for a citrus version or cacao powder for something chocolatey! This one is a great on the go snack to pack in the car or to school/uni/work. It’ll last a good week in the fridge.
Ingredients (1 generous serve)
4 tablespoons of cooked quinoa
1 tbsp shredded coconut
1 tbsp coconut yoghurt ( I love nakula!)
1 tbsp flaxseeds
1 handful of mixed nuts of choice ( I used a combo of slivered almonds, pecans, macadamias, cashews and walnuts)
1 handful pepitas
pinch of vanilla
pinch of cinnamon
1 heaped tsp of honey
3 spoons of almond milk
- heat the pan on low/medium and throw in the nuts to toast. Just before they are reading add in the honey and stir then turn off stove to cool until the nuts and honey stick together
- In a bowl combine all other ingredients and stir together well
- Add half the cooked nuts and stir in the mixture and use the other half to sprinkle on top for a yummy honey nut crunch!
- Serve with berries, extra coconut yoghurt or just have on its own!
