Stuffed Capsicums with Spinach, Cauliflower Rice & Turkey Mince

 

 

These are so easy and delicious and can be made vegetarian by just taking out the turkey mince and adding some alternative protein ( lentils, tofu, edamame beans etc). They are a beautiful addition to any celebration or an easy dinner to make at the end of a  long day.

Recipe (serves 3) 

Ingredients

3 capsicums

1/3 cauliflower head pulsed OR 1 cup cauliflower rice

1 cup baby spinach

1/2 packet turkey mince

1/4 red onion

1 tbsp fresh chilli

2-3 cloves fresh garlic

olive oil, salt, pepper

Method 

  1. Preheat the oven to 180 degrees celsius
  2. In a pan on medium heat, add 2 tbsp olive oil and cook the turkey mince until brown with the onion, garlic and chilli
  3. Add the spinach and cauliflower rice to the pan and combine with the mince until mixed well and the spinach is sautéed through
  4. Cut the capsicums 2/3 of the way and cut away the middle. Place on a baking tray and fill the insides with the mixture. Drizzle with olive oil and salt and pepper
  5. Place in the oven for 20-30 minutes or until the mixture is browned on top and the capsicums are cooked
  6. Serve on a bed of spinach with some flaked almonds and enjoy
