5 Minute Veggie Brunch Plate

 

I made these when I was up the coast on holiday with my family for me and my mum one morning after a beautiful beach walk. I just made do with what was in the fridge and created these delicious and nutritious plates for us to share in the sun! This recipe is just a guide, use whatever healthy ingredients you have in the fridge! Make sure you have an element of protein and some good fats with your fruit & veg

Recipe (serves 2)

Ingredients:

2 boiled eggs

2 tbsp sauerkraut

1/2 avocado

1/2 carrot sliced up

3 big handfuls spinach leaves

1 big handful blueberries

handful pepitas

2 tbsp hummus

Halve all ingredients between two plates, drizzle with olive oil and spices of choice and enjoy!
