Quinoa &Veggie Madness Salad

 

I made this salad recently for a big christmas dinner. It is a great filling salad with good fats, carbohydrates and plenty of nutrients to have at home or take to an event! Mix it up with adding your favourite veggies, it is a great way to use up some old ingredients in the fridge by roasting them and making them nice and delicious! I have used fresh spinach here but you can also toss it with any sort of leafy greens you like ( e.g. rocket,kale,  cos lettuce or mixed greens)

Ingredients (serves 4) 

  • 1 cup cooked quinoa
  • 1 big bag/2 big cups mixed greens
  • 1 sweet potato
  • 1/2 cauliflower
  • 1/2 eggplant
  • 1 avocado
  • 2 big handfuls of seeds of choice ( I used pepitas and sunflower)
  • Dressing: juice of 1 lemon, 3 tbsp olive oil, 2 tbsp tahini, salt, pepper and chill

Method 

  1. Cook quinoa and leave in pot while you prepare the vegetables ( it should be nice and loose and not gluggy)
  2. Set the oven to 180 degrees and chop your vegetables in small pieces. Place in the oven with a drizzle of olive oil and spices of choice ( I love cayenne, turmeric and salt and pepper as well as some garlic cloves). Cook for 30-40 minutes or until brown and nice and roasted
  3. Place your fresh greens in a big bowl. Toss with the quinoa and roasted vegetables
  4. Cut up the avocado into small pieces and mix into the salad.
  5. Take your seeds (or nuts) of choice and toes lightly in a pan until golden ( they burn very easily so use a low heat and keep shaking the pan so they mix around)
  6. Stir the dressing ingredients in a small bowl and mix through the salad with the seeds
