Porridge is such an easy meal to make in the mornings and allows you to top with whatever you feel like or have lying around in the kitchen. You can use either oats or buckwheat (for coeliacs) .
For a summer option when you don’t want them warm, try making them the night before and keeping in the fridge overnight. Otherwise pop in the pot in the morning for a quick, warm and nourishing meal.
1/2 cup oats/buckinis
1/4 cup milk of choice (I use almond or coconut)
Toppings: ( use whatever you like, I have put some ideas below)
- fresh fruit/berries
- nut butter
- coconut yoghurt
- superfood mix ( I have pepitas, goji berries, cacao nibs)
- Place the oats and water in the pot and simmer, keep stirring until the oats are cooked and the water has been absorbed. While there is just a bit of water left add the milk and keep stirring till the oats are thick and creamy
- Place in a bowl and top with whatever you like!
