Choc Chip, Oat & Walnut Cookies

I don’t know if any of you Sydney people have been to the cafe luxe in sydney but they make the yummiest choc and oat cookies everrrr but they are not the best for you- however this is always a healthy alternative to these things!! I wanted to make something just as yummy and equally healthy and made the yummiest cookies. They are best eaten warm out the oven when the chocolate is melting out (um yum). Ingredients (makes 12-14 cookies)

2 tbsp honey(maple syrup for vegans or if you prefer flavour)

1/4 cup shredded coconut

1 egg( use flax or chia egg for vegan)

2 cups oats


2 tbsp LSA

1/2 cup broken up walnuts( or nuts of choice, pecans would be nice too)

2 tbsp coconut oil

1/2 cup coconut milk ( or milk of choice. I used mine out of a can so it was thick and creamy)

half block chocolate chopped up ( I love dark choc but use any you like)

pinch vanilla, salt, cinnamon


  1. Preheat the oven to 180 degrees celsius and line a tray with baking paper
  2. Combine all ingredients in a bowl. It is best to get messy and use your hands to make sure everything is mixed well properly
  3. Roll into balls and slightly flatten on a baking tray
  4. Bake for 10-15 minutes and enjoy!
