Green Goodness Salad

This is one of my favourite go to salads ever with a bunch of yummy veggies that are super easy to prepare. It contains some good fats with the dressing ,pepitas and avo and good fibre(cruciferous vegetables!) and nutrients from the mix of veggies. For vegetarians, the chickpeas do add some protein, personally I like to still add a side of protein to the salad, usually some chicken or fish goes really nicely but you could also have it on its own. Recipe below đŸ™‚

Ingredients(serves 2 as a side)

2 cups mixed greens ( I used spinach and kale)

1/2 avocado

1/2 tin chickpeas

1/2 broccoli head

1/2 cup brussel sprouts

3 tbsp pepitas

1/2 lemon

2 tbsp tahini

2 tbsp olive oil

spices for roasting ( chilli flakes, paprika, garlic, salt pepper)

Method 

  1. Preheat oven to 180 degrees celsius
  2. Coat your chickpeas, brussel sprouts and broccoli in spices of choice and bake until crispy and golden ( about half an hour)
  3. Mix the roasted vegetables in a large bowl with your leaves and chopped avocado and any other veggies of choice
  4. In a small saucepan, toss the pepitas until golden.
  5. while the seeds cool, in a small bowl, combine the lemon, olive oil and tahini. When it is mixed well, toss over the salad along with the pepitas
  6. I often find using my hands gets the dressing through all the veggies much better! It tastes better when it is combined well because the flavours from the dressing and the avo is absorbed by the kale and spinach more
  7. Add protein of choice and enjoy!!
