Go to Salad of the Moment

This has been my go to salad over summer and still now that it is Autumn I am somehow not sick of it. It is the best thing ever- it takes only 5 minutes and you can add any easy protein of choice! It has a great assortment of vitamins, good carbs, fats and proteins and is delicious. It is fresh and light but still substantial enough for a good quality meal. A great salad to take on the go or enjoy as a nice meal at home. It is a great base for any other veggies as well, I will often start with this combo and add extra veggies I have in the fridge to it like roasted brussels, broccoli or sweet potato.

Ingredients(serves 1)


1 cup mixed leaves (rocket, lettuce, spinach)

1/4 cup cooked brown rice

1 handful roasted slivered almonds

1 handful of crumbled feta (optional for non dairy)

1/4 apple sliced up into small cubes

1 tbsp sauerkraut or kimchi

protein of choice (chicken, eggs, tofu, tuna etc)


1 tbsp olive oil

1 tbsp soy sauce or tamari

1 tsp chilli flakes

salt and pepper


  1. Heat a small frying pan on medium and toast almonds
  2. Combine all ingredients in a bowl including the almonds
  3. Mix all dressing ingredients together and pour over salad and coat well until all ingredients have absorbed the dressing ( this is key to a  yummy salad – you want the rice and leaves to be coated in the yummy dressing!)

Too easy!! Enjoy x
