Choc Blueberry Muffins

Colder weather has me dreaming of warming and soft baked goods. Eating healthy doesnt mean sacrificing yumminess like these choccie and blueberry muffins. Just as tasty with your favourite melted oozing choccie but without the nasties that cause sluggishness, bloating and poor digestion. Instead these are packed with good fats and high protein ingredients to keep you going all day. These are yummiest warm – enjoy !

Ingredients

1 cup berries ( i used blueberries)

1/2 cup choc chips of choice( I broke up 90% dark choc)

2 eggs( or chia/flax egg if vegan)

1 cup almond meal

3/4 cup buckwheat flour

2 tsp baking powder

pinch salt

1 tbsp almond butter

vanilla

1 tsp manuka honey

1 tbsp chia

Method

  1. Combine dry ingredients
  2. Mix in wet ingredients
  3. Stir through berries and choc. If you have a high blender stir this through manually so that it doesnt get ground up, you want nice chunks so they melt in the oven
  4. Bake at 180 degrees celsius for 25-30 minutes or until cooked through middle
