I love cooking up a bunch of veggie sides and dishes when I have people over for dinner. You get to explore such different yummy flavours with different ingredients! This is one of my favourites- it is so simple and easy to make but tastes so so good. Perfect to pair with any meal.
1-2 bunches broccolini
3 cloves garlic crushed
3 tbsp feta crumbles
1/2 cup slivered almonds toasted ( in pan or oven)
1/2 juice lemon
2 tbsp olive oil
salt & pepper to taste
- Place 1 tbsp olive oil and crushed garlic in a pan on medium until the garlic is browned and it starts to sizzle
- Toss the broccolini in the pan for about 4-5 mins tossing frequently (keep on low so it warms through )
- Turn the heat up slightly to char the edges slightly ( can also do this on the BBQ!)
- Lay on a dish and top with the lemon juice and 1 tbsp of olive oil. Add the feta, almonds and salt and pepper and serve!
