Espresso Granola Brekkie Biscuits

I was inspired by some beautiful products( hello espresso infused honey!) from the bircher bar I got sent to create these delicious, healthy cookies, a perfect on the go snack or cheeky brekkie. Using a healthy granola full of healthy fats and satiating fibres and protein, these cookies are a perfect nutritionally approved snack to keep your hunger at bay and turn to as an alternative to a sweet treat! 2 cups muesli ( I used a mix of bircher bar energy mix and paleo mix, if you don’t have this use your own or combine nuts, seeds , oats and buckinis)

1 tbsp instant coffee mixed with a tiny bit of water

2 tbsp coconut oil

2 tbsp espresso infused honey ( or regular, maple syrup if vegan)

1/2 cup almond meal ( give or take depending on how much water from the coffee you use, will effect consistency)

1 tsp baking soda

1 tsp cinnamon


  1. Preheat oven to 180 degrees
  2. Place all ingredients but muesli in a blender and combine
  3. Stir through the muesli so it dousing get ground up and stays chunky
  4. Roll into desired size balls and lightly press on each one so it flattens a bit
  5. Bake for 25 mins and enjoy!

Note: I topped mine with some coffee beans. Try adding your fave superfoods like some coconut on top or drizzled dark choc
