Hemp Falafel Burgers with Miso Tahini Dressing

I was inspired by mor life’s creation of a hemp falafel mix to make these hemp falafel veggie burgers. I myself am not vegetarian and do love a good grass fed meat patty sometimes but also crave plant based meals at times too. I have never been a big burger lover but substituting all the crap (sorry but true) for a range of diverse veggies turns it into my kind of burger. I was listening to a podcast on gut health lately about the importance of eating a versatility of vegetables to help support a healthy gut micro biome and this recipe does just the trick- lots of colours, flavours and variety of whole foods. High in protein and all the vitamins you ever need! You can use any falafel you have if you don’t have this certain mix or make your own veggie burgers for the patty. ( just make sure there is a good source of protein as the base !)

Ingredients 

2 tbsp hemp falafel mix OR your choice of patty

2 thick sides of a capsicum

1/2 cup grated carrot

handful iceberg lettuce leaves

2-3 slices tomato

1 portobello mushroom

1/2 avocado sliced

Dressing:

  • 1 tsp miso
  • 1 tbsp tahini
  • 1 tsp olive oil
  • 1 tbsp hot water
  • 1 tsp sesame oil

 

Method

  1. Preheat oven to 180 degrees celsius
  2. Place capsicum, mushroom and falafel mix on a tray and drizzle with olive oil, salt and pepper. Bake for around 20 minutes or until nicely grilled and soft. Allow to cool before assembling
  3. Assemble all ingredients in between the two slices of capsicum
  4. Mix all dressing ingredients together and pour over burger then place the top piece of capsicum back on and enjoy!

It is messy but oh so good so enjoy this delicious mess!
