Pumpkin Spice Halloween Choc Chip Brownies

I know some Australians aren’t huge on halloween but it’s a great excuse to have some fun and get down and dirty in the kitchen and get baking! So much fun to do with any kids you might know or just as a cute family or friends weekend activity. Using pumpkin spice inspired by Americans adds a little special flavour that you may not usually use. Goes well with the caramel flavour of the brownies too- fudgey and gooey. Add a bunch of choc chips for good measure !! (highly recommend ) 




6 dates pitted

1 cup walnuts or nuts of choice (pecans are nice too )

1 tbsp almond butter

pinch salt

1 tbsp pumpkin spice

dash of vanilla bean

1/2- 1  cup oats ( add more if mix is too dry) * sub with LSA or buckwheat flour if intolerant to oats

1/2 cup shredded coconut

1 tbsp coconut oil

1 egg

1/2 cup dark choc chips


  1. Preheat oven to 180 degrees
  2. In a blender or mixing bowl, combine ingredients well
  3. Line tin with some baking paper and place mixture evenly
  4. Bake for 25-30 minutes or until golden ( safely place a knife or toothpick in to make sure the brownie is cooked through. If you like it gooey try this a little earlier so you can take it out just how you like it )
  5. Allow to cool then cut into squares or some scary halloween shapes!
