White Christmas (gf,df,paleo,vegan)

I have to say this is the most delicious thing I have ever created. It is also the most dangerous because my Mum and I cannot stop eating it haha. I am addicted to white chocolate and this tastes just like it and actually better no joke. More importantly this superfood packed slice / rocky road is full of healthy fats nourishing you from the inside out. So if you didn’t need another reason to eat it, it is not only so delicious but also so good for you! It is a great dessert to make for xmas functions, to have as a healthy dessert or this year I am making some to take up the coast with me to share with my family and friends! Fill with all your fave superfoods and let me know if you make it would love to know if you are as obsessed as me !

Ingredients 

1/4 cup coconut butter

1/4 cashew or cashew & coconut butter ( I get from naked foods)

2 tbsp coconut oil

2 tbsp cacao butter

1 tsp vanilla bean paste

1-2 tbsp maple syrup ( depending how sweet you like)

sprinkle rock salt

2 tbsp coconut flakes

1 tbsp cacao nibs

1 tbsp goji berries

2 tbsp crushed pistachio nuts

Method 

  1. In a small saucepan on low heat melt all ingredients except for the add ins ( coconut, nibs, berries, nuts)
  2. Stir carefully until everything is combined but not too hot that its boiling
  3. Add in all the superfoods and stir together
  4. Line a baking tin and pour in mix
  5. Allow to set in freezer for a few hours then slice

Tip: this melts quite easily! If you are travelling with it make sure you keep in cooler bag, it is best eaten right out the freezer.
