Made this salad for a family christmas dinner last week and went down a treat!! A great addition to the feasting table- pair with some meats and a fresh salad and you’re good to go! Love adding a bit of colour to the plate too !!
1 bunch asparagus
3 carrots sliced lengthways
1 red capsicum cut into chunks
1 can chickpeas
1 handful fresh herbs ( i used mint)
3 tbsp olive oil
salt, paprika, turmeric, pepper
2 tbsp pepitas
- Preheat oven to 180 degrees
- Place veggies into 2 trays and drizzle with olive oil, spices and salt and pepper and use hands to toss everything well so it is all coated
- Bake for 45 minutes or until all veggies are golden and crispy
- Top with fresh herbs and pepitas and enjoy!
