One Pan Brekkie Fritter

This morning I was craving some yummy fritters to breakfast and was inspired to make my own giant crispy deliciousness. It is great to throw in whatever veggies you have in the fridge you don’t need to follow mine completely is a good guide. Also I added bit of cheese but if you don’t like dairy its not necessary. Using fresh herbs and a good amount of salt and pepper, and you’ll have a winner brekkie!

Ingredients

2 handfuls slaw or veg of choice

1 handful sliced mushrooms

1 big handful grated sweet potato

1 tbsp buckwheat flour

1 egg

turmeric, chilli, salt, pepper, fresh basil

handful grated cheese (optional)

dash of milk ( I used hemp)

1 clove garlic finely chopped

1 tbsp olive oil

Method

  1. In a large bowl, combine all ingredients with a fork and whisk
  2. Heat a small pan on medium heat with the olive oil until hot
  3. Pour mixture in and fry lightly for about 1-2 minutes each side until crispy
  4. Top with some more salt and pepper and enjoy! Eat while warm to maximise crispiness (trust me)
