Chia & Hemp Breakfast Pudding

Who else is enjoying the hemp trend at the moment? After becoming closer with the founders of myhemple, (use SARAHC10 for 10% off)I have been increasingly using hemp seeds & oils in my cooking and love it! The flavour is delicious and nutty and it is so beneficial for us, containing many great omegas, magnesium & protein. I also picked up some hemp milk from the farmers market and used it in my chia as well which was delicious. You can sub for any milk of your choice though. This is a great recipe for meal prepping, I often make a bigger batch and keep it in the fridge then just add toppings like fruit, granola & nut butter on the day if I am off to work/uni etc.

Ingredients (serves 2)

1/3 cup chia seeds

1 cup hemp milk ( or milk of choice)

1 tbsp hemp seeds

1 tsp cinnamon

1 tsp vanilla bean

1/2 cup berries ( can use frozen too!)

Toppings:

hemp seeds, fruit, granola, nut butter, coconut flakes, nuts , anything you like! I love getting superfood toppings from local bulk food stores like naked foods.

Method

  1. In a container place all ingredients (not toppings) and stir well until thoroughly combined
  2. Leave to set overnight ( if you can try and stir it every now and again as the chia can sometimes get stuck and not mix properly)
  3. In the morning it should have thickened and be ready! Take your amount desired and then top with yummy goodies!
