Healthy Pizzas

Sometimes you just want a quick go to meal and something that can cater to everyone as well. That’s why homemade pizzas are my favourite thing because they are so stress free, everyone can top their own and you don’t need to stress ( except for trying to work out how many toppings you can have without your pizza overflowing). I have put two of my favourite combos below but honestly chuck anything on top thats in your fridge and I can guarantee it will be a good time

Ingredients (serves 2) 

  • 2 wraps of choice ( I go for wholemeal!)
  • 2 tbsp olive oil
  • salt, pepper, your choice of spices and herbs

Option 1: Vegan Mushroom

  • 3 tbsp hummus for base
  • 1/2 cup mushrooms
  • 1/4 cup pitted olives
  • 1/4 cup pine nuts
  • 1 cup spinach

Option 2: Turmeric Chicken

  • fresh tomato sauce or pesto for base
  • 1/2 cup mozzarella
  • 1/2 cup chopped baby tomatoes
  • 1 cup cooked chicken pieces cooked in turmeric ( or just add turmeric on top)
  • 1 cup spinach

Method 

  1. Preheat oven to 180 degres
  2. Spread your choice of base on your wrap ( could be pesto, hummus, tahini, tomato paste etc)
  3. Place your choice of toppings on top. Always place spinach first then everything else on top, drizzle with olive oil.
  4. Season with your favourite spices – I love chilli, salt, pepper and cayenne!
  5. Bake for about 20 minutes or until golden
