Haloumi & Carrot Salad

This is the yummiest salad ever and is so quick and easy to make. A perfect go to for Monday night. I made this quickly in between jobs and was great for dinner. I paired it with some grilled salmon. If you are keeping it plant based- try adding some crispy asian tofu or roasted chickpeas for a protein packed, delicious meal . Make extra and pack it for lunch tomorrow ! Ingredients 

2 cups rocket

4 carrots sliced into chips

1/2 block haloumi sliced and fried

Your choice of nuts/seeds ( I used 2 handfuls toasted pine nuts)

2 tbsp olive oil + 1 tbsp for dressing

1 tbsp honey

sprinkle sesame seeds

salt, pepper

Method 

  1. In a pan fry your carrots and haloumi in olive oil, honey and sesame seeds
  2. Place on top of rocket once warm and crispy. Top with olive oil, salt , pepper and pine nuts
