Paleo Muesli Bars

I was inspired to create a quick fix muesli bar for a great long lasting snack to keep me going throughout the day. Lots of recipes use oats as the bulk of bars with just a few other ingredients thrown in and I wanted to challenge myself to try and make something without them and create something new and different! These are based with puffed buckwheat and coconut and full of loaded superfoods. Using the cacao butter adds such a decadent and creamy flavour in these bars it is seriously life changing. PS cannot recommend roasted macadamias highly enough ( but just use whichever nuts you prefer!) Don’t forget to tag me in your creations I would love to see them @scoopitup_


1 cup puffed buckwheat

1 cup coconut

1 cup nuts/seeds ( I used macadamia, chia, pepitas almonds but you can use whatever you have)

1/4 cup cacao nibs

2 tbsp cacao butter

1 tsp vanilla

2 tbsp honey

1 tbsp coconut oil

pinch salt

Optional; dried fruit, protein, ,maca , choc to drizzle


  1. Preheat the oven to 180 degrees. Bake your buckwheat puffs , coconut, nuts and seeds in the oven for about 10 minutes or until golden and place into a large bowl
  2. In a saucepan or microwave, combine the honey, coconut oil, cacao butter, vanilla and salt
  3. Place your remaining dry ingredients into your bowl and then stir together with the wet mixture till coated well
  4. Line a baking tin with baking paper and press mixture firmly into the tin
  5. Place in the freezer for 2 hours before cutting into bars

Optional: melt some dark chocolate and drizzle on top for an extra yummy slice !
