Stuffed Sweet Potato with Hummus & Crispy Chickpeas

Is anyone else craving warm comforting meals at the moment? Maybe its the weather or that weird time of year but I am feeling allllll the warm, roasted veg. What better than a meat free veggie nourish bowl. This plant based goodness is made up of all real whole foods- leaving your body feeling nourished, grounded and happy. Try making it for dinner and double the recipe for a yummy lunch tomorrow ! 

Ingredients ( serves 1) 

  • 1/2 sweet potato
  • 1 cup greens of choice ( I did rocket & spinach)
  • 1/2 cup chopped baby tomatoes
  • 2 tbsp hummus
  • 1/2 cup chickpeas
  • 1/2 cup alfalfa sprouts
  • 1 tbsp olive oil
  • Spices of choice: eg chilli, cumin, dukkah & hemp seeds ( use SARAHC10 for 10% hemple)


  1. Preheat the oven to 200 degrees celsius
  2. Cut a line down the middle of  your sweet potato and place on a baking tray. Drizzle with olive oil and your choice of spices
  3. Add the chickpeas in the same tin ( monitor as they may not need as long to crisp up) and coat them in the oil and spices too
  4. Leave for 30 minutes or until soft
  5. Place greens and tomatoes on your plate, then add the sweet potato on top. The line should’ve created a nice dent for you to fill with your hummus, sprouts and chickpeas
  6. Top with extra salt, pepper dukkah & hemp seeds
