Tofu Nourish Bowl

Another Meat Free Monday bowl tonight! Starting to become my favourite. So much plant based goodness- focusing on getting good quality nutrients, carbs & protein from your veggies . Sneaky meal prep tip I use in here is the coles prepacked slaw salad: it comes with shredded kale and veg and a packet of mixed seeds which I just throw in as part of the bowl. You can use up any veggies you have leftover in the fridge or roast your faves to add. I love drizzling my bowl with tahini or some homemade pesto. 


  • 1/2 block cut up tofu
  • 1 cup greens
  • 1/2 cup slaw
  • 1/2 cup alfalfa sprouts
  • 1/2 cup capsicum or raw veggie of choice
  • 1/2 cup roasted chickpeas
  • 1/2 cup roasted veggies of choice ( I did broccoli and brussel sprouts)
  • To top: olive or hemp oil, tahini, pesto, roasted almonds, chilli, salt and pepper


  1. Preheat the oven to 180 degrees celsius
  2. Coat your tofu, broccoli, brussels and chickpeas in olive oil and spices of choice and bake for 30 minutes ( I used dukkah, cayenne pepper & cumin)
  3. In a bowl assemble all of your raw vegetables
  4. Add your roasted veggies, chickpeas and tofu to your bowl
  5. Dress with your choice of goodies , I love drizzling mine with cold pressed hemp oil, tahini and roasted almonds / seeds
