Green Quinoa Salad w Crunchy Pepitas & Tahini Dressing

This quick go to meat free meal is soothing on the digestion, nourishing and oh so delicious. I love adding sauteed kale and plenty of greens which go really well with the tahini dressing ( YUM). A perfect plant based protein in the quinoa and slow releasing carbohydrate with healthy fats to leave you glowing. Enjoy x

Ingredients (serve 2) 

  • 1 cup quinoa
  • 1 cup mushrooms
  • 1 cup kale
  • 1 cup broccoli
  • 1/2 avocado
  • 1 handful pepitas
  • 2 tbsp olive oil
  • 1/2 lemon
  • 1 tbsp tahini
  • 1 tbsp tamari / soy/ coconut aminos
  • salt, pepper

Method 

  1. In a pot boil your quinoa and cook
  2. In a fry pan, sauté your kale, mushrooms and broccoli in a drop of your olive oil and lemon. Add salt , pepper and tamari
  3. Remove from pan and set aside
  4. Add your pepitas to the pan and toast lightly for a minute
  5. Combine all ingredients together and add avocado
  6. In a small bowl combine tahini, lemon and olive oil and stir well. Pour over salad and toss to combine so everything is nicely flavoured and coated ( YUM) Add some more salt and pepper for good meausre 😉
