Mini Choc Banana Muffins (Paleo)

If I didn’t need the weekend as an excuse to bake, I also had some old bananas to use up in the kitchen so I made these little yummy muffins! Unlike regular muffins which are sickly sweet and dense, these are light and fluffy and full of good ingredients – lots of seeds, nut meal and eggs. The bananas add a great natural sweetness so no other sweeteners are needed! Add a scoop of vanilla or caramel protein powder for an extra boost and flavour – otherwise enjoy just as they are. 

Tip: store in the freezer and defrost when you feel like a snack!



2 bananas

2 eggs

1/4 cup flaxseeds

1 tbsp chia seeds

1 cup almond meal

1 tsp baking soda

1 tsp vanilla

pinch rock salt

1 scoop protein ( optional)

1/4 cup nut milk ( add if the mix feels too dry, or sub with some nut butter to wetten the mix)

1/2 cup dark choc chunks


  1. Preheat the oven to 170 degrees celsius
  2. Combine all ingredients in a bowl or blender . If you are mixing in a bowl, mash te banana first before combining with the rest
  3. Scoop into muffin tin
  4. Top with a square of your favourite dark chocolate
  5. Bake for 15 minutes or until golden on top . Enjoy warm for the best healthy treat!
