Turmeric Prawn Curry

As we come into cooler months it is important to eat according to seasons- starting to replace fresh cool meals with warm ones containing lots of immune supporting herbs and spices. This turmeric prawn curry is just that. A delicious balance of healing and nourishing spices- pair with some brown rice, soba noodles, cauliflower rice & greens.

Ingredients

500 g prawns

1 large onion

½ cup tinned tomatoes

80ml coconut cream

½ cup unsweetened almond milk ( or extra coconut cream)

¾ tsp turmeric

1 tbsp crushed garlic

1 tsp salt

1 tsp fresh chilli

6 curry leaves

1 tsp cumin

1 tsp garam masala

Method

  1. Cook chopped onion and prawns in a large pot with a dash of olive oil
  2. Add in coconut milk, tomato, spices and curry leaves
  3. Stir until well combined
  4. Serve with your choice of steamed rice or cauliflower rice and top with freshly chopped coriander and dukkah
