Cookies and Cream Protein Bars

My new favourite healthy snack or dessert- I am such a sucker for cookies and cream. ( hello hersheys and connoiseur hehe) . Obviously can’t be eating ice cream every day so try these instead. Great for on the go snacks too ( hello 3 pm slump). The protein and healthy fats are a great way to stabilise energy levels without a sugar high. Let me know if you make these and if you enjoy xx



  • 2 tbsp Cookies and Cream protein ( or any kind vanilla/carame/choc will work)
  • 2 tbsp maple syrup
  • 1-2 tbsp coconut oil
  • 1 tbsp oats or buckinis
  • 1 tbsp hemp seeds
  • 1 tbsp linseed
  • 1 tbsp sunflower seeds
  • 2 tbsp coconut
  • 1/2 cup almonds
  • 2 tbsp cacao nibs
  • 1 tbsp tahini to drizzle

*note: if you don’t have all these seeds just add extra of what you have


  1. In a blender, mix everything together besides cacao nibs and tahini
  2. If it is too dry, add a dash of warm water. It should be a dough like consistency
  3. Stir in cacao nibs or blend but be careful to not chop up the cacao nibs, you want to leave them chunky not ground up
  4. Press into a lined baking tin and place in the freezer to set
  5. Drizzle with tahini and extra cacao nibs to serve
