Lemon, Poppyseed & Macadamia Shortbread

So I never had faith in gluten free/ dairy free shortbread until I made this. Somehow it is still crumbly but also melts in your mouth PLUS it is honestly so easy! Play around with flavours and ingredients- it is so delish my family ate the whole batch in 2 days ! Let me know if you make it .. such a goodie 




1 tsp baking soda

pinch salt

2 tbsp poppyseeds

zest of 1 lemon

1/2 cup chopped macadamias

1-2 tbsp honey ot maple

1/3 cup almond meal

1/3 cup coconut flour

1/3 cup buckwheat flour

1/2 cup melted coconut oil


  1. Preheat the oven to 180 degrees
  2. Combine all ingredients together except for macadamias
  3. Stir through macadamias into dough
  4. Press into a lined baking tin and bake for 12-15 minutes or until golden
  5. Slice once cooled and store in an airtight container
