Coconut, Tahini & Pecan Choc Chip Cookies

Don’t you just love when you wing an epic recipe on the spot! My go to for cookies is usually almond meal which I had run out of this morning so I used coconut flour instead. I usually wouldn’t use it on its own as it makes things quite crumbly but these were still super yum! Free of dairy and gluten, and little sugar paired with the healthy fats makes the perfect go to snack or treat

Ingredients

1 cup coconut flour

1/2 cup shredded coconut

2 tbsp tahini

1-2 tbsp maple syrup (depending how sweet you want)

1 tbsp coconut oil

dash of almond milk

1/2 cup chopped pecans

1/2 cup choc chips

1 tsp baking powder

pinch salt

1 tsp vanilla

Method

  1. Preheat oven to 180 degrees
  2. Mix all ingredients together besides nuts, chocolate and milk
  3. Stir through nuts and chocolate into dough
  4. Add milk and stir slowly until a dough mix has formed ( the coconut flour can make it quite dry so keep adding )
  5. Roll into balls onto a lined baking tin and bake for 10-12 minutes
  6. Enjoy warm while the choccie melts (yum!)
