Cacao & Beetroot Truffles

Sneaking veg into anything- especially desserts is my favourite thing ever! It is so good knowing you’re getting an extra serve of veggies in and you can’t even taste it – in fact it actually adds sweetness and a beautiful colour. Try making these for your next dessert when you’ve got friends over for dinner or just feel like a wholesome treat.



1 packet coles beetroot cooked ( about 3 beetroots pre cooked and cooled)

1 tsp vanilla

6 medjool dates soaked

1 cup almond meal

1 cup roasted coconut

1 block dark chocolate melted


  1. In a blender , blend the beetroot into a puree
  2. Add in the dates and blend
  3. Add the almond meal, vanilla and coconut and mix
  4. Roll into balls and place in freezer to set ( for about 1 hour +)
  5. Melt your chocolate into a bowl and coat each ball generously. If they are cold the chocolate will soon harden
  6. Place back in freezer to set and store till ready to serve

TIP: add a sprinkle of rock salt to the top for an extra yummy touch
