Rainbow Slaw

I am such a fan of a raw veggie salad. It is fresh, quick, easy and wholesome! I remade a healthy version of a slaw which is often filled with rubbish when buying out. I used a great new gut friendly mayo made with bone broth and apple cider. It was so delish- perfectly paired with some crispy grilled salmon. Enjoy xx

Ingredients

1/4 white cabbage

1/4 red cabbage

1/2 cup celery chopped

1 grated carrot

1 handful fresh coriander

Roasted sunflower seeds

Lime wedge to serve

handful cranberries

Dressing

2 tbsp gut friendly mayo

1 tbsp apple cider vinegar

1 tsp mustard

Salt and pepper

Method

1. Slice all veggies finely and toss together in a bowl

2. In a small glass, stir dressing ingredients together until well combined

3. Pour over slaw and mix through well

4. Top with extra herbs and seeds to serve
