Sweet Potato Brownies

You all know I am such a fun of sneaky veg in any meal! Especially baking. These sweet potato brownies are fudgy and delicious and so much better for you than a regular brownie. They are low in sugar and not sickly sweet like the norm plus the spices add a nice sugar balancing property. Get creative with nuts and choc to create yummy flavours. Try adding orange zest for a different citrus touch!

  • 1 cup sweet potato boiled and mashed
  • 1/2 cup cacao powder
  • 1/2 cup almond meal
  • 5 dates pitted
  • 1 egg ( flax for vegan )
  • 1 tsp baking powder
  • 1 tbsp cinnamon
  • choc chunks ( measure with your heart)
  • optional add ins: nuts, reishi, maca powder, collagen

  • Preheat oven to 180 degrees celsius
  • combine altogether in bowl or blender until dough forms
  • Press into lined baking tin
  • Bake for 35 minutes
  • Allow to cool before slicing. Store in the fridge or freezer ( they will mould after a few days due to lack of preservatives)

YUM! Enjoy XO
