Turmeric Carrot Cake

This is one of my favourite gut loving sweet brekkies or afternoon teas. It is very low in sugar and great for the gut with turmeric, maca powder and adaptogenic mushrooms. It is very wholesome and satiating , high in protein and an all round nourishing recipe ! I like to slice and freeze it then toast when needed if I don’t think I will use the loaf up in a week.


1 large carrot grated

3 small eggs or 2 large

3/4 cup almond meal

1 tbsp turmeric

1/4 cup stevia

1 tsp cinnamon/all spice/ginger

1 tsp baking powder

1/3 cup sesame seeds

1/4 cup coconut milk

1/2 cup chopped nuts ( I used walnuts , pecans are nice too)

optional : maca powder/ collagen/ reishi mushroom


  1. Preheat oven to 180 degrees
  2. Mix together all dry ingredients and then combine with all other
  3. Place into a lined baking tray
  4. Bake for 30-35 minutes or until cooked through . Allow to cool before slicing

TIP: I love to toast this and then spread with almond butter or tahini and berries or some coconut yoghurt . Enjoy! XO
